we were stuck at home with two sick kids.
i was bored.
i let my taste buds do the driving.
and created my very own whipped cream cookies.
chocolate and boysenberry.
i could have done without the cookie part,
and just gone straight for the fillings,
which i did while the cookies were baking.
so did max.
both kid have learned that when the kitchen aid is mixing,
the best place to be is on your stool in the kitchen with me.
crunchy
creamy
sugary sweet.
next time i'm doing whoopee pies instead of the crunchy cookie i did this time.
and a crushed oreo filling.
but let's not get ahead of ourselves here.
my taste buds were only halfway satisfied with the end result today,
but the eating along the way was well worth the escapade.

whipping cream frosting
{i made two separate batches: chocolate and boysenberry}
1 c heavy whipping cream
1-2 tbls white sugar
1 tsp vanilla
whip until it looks like good old fashioned whipping cream.
{for chocolate: add 3 tsp baking cocoa to mixture and continue whipping until mixed fully}
{for boysenberry: add 1/2 c boysenberry jam to mixture and continue whipping until mixed fully}
place in fridge to cool or freezer for 20 min or so for more firm cream.

chocolate thins
1 box devil's food cake mix
2 cubes butter, room temp
2 eggs
mix altogether.
place dime size {yes that small} balls onto cookie sheet.
cook for 8 min. at 350*.
let cool.
assemble with frosting in the middle of two cookies or leave open faced,
which was my final preference to taste more of the whipping cream flavors.

max will be getting a chocolate cake
with boysenberry and chocolate whipping cream frosting.
