FRIED GREEN TOMATOES
INGREDIENTS:
2-3 big fat green tomatoes, cut into 1/4" slices
kosher salt and freshly ground black pepper
3/4 cup flour
1 tbls garlic powder
4 eggs
2 tbls milk
1 1/2 cups panko bread crumbs
pinch of cayenne pepper
pinch of paprika
3 shallow dishes for your assembly line
canola or vegetable oil for frying
{enough to fill your pan about 1/2"-1" high}
DIRECTIONS:
1. cut your tomatoes, kosher salt and pepper them,
and discard the end pieces. heat your oil in a pan on the stove for about 5 minutes at medium heat.
{i did my first batch medium high and it burned them.
my second batch at medium heat was perfect.}
2. flour and garlic powder into 1 small shallow dish.
3. eggs and milk into 1 small shallow dish,
whisk together with a fork.
4. panko bread crumbs, cayenne pepper,
and paprika in another shallow dish.
5. coat in the flour mixture, dredge/sink into the egg/milk mixture making sure all of the flour is covered with the egg/milk mixture, then coat with the panko bread crumbs mixture.
do 4-5 slices at a time.
{i stacked mine on top of each other off to the side of the bread crumb bowl
so they could all go into the frier at the same time.}
6. place 4-5 slices into your pan of oil.
turn when golden brown. cool on paper towel.
7. repeat with second and/or third batches.
8. serve warm with ranch bbq sauce,
or whatever dip you fancy with your fried foods.
{i used byu creamery ranch with a few squirts of our homemade bbq sauce,
but just use what you have. it will be awesome!}
